APPLE CAKE WITH CREAM CHEESE FROSTING

2 eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. peeled apples, diced
1 c. walnuts, chopped
Beat eggs until light and fluffy. Gradually add sugar, oil, and vanilla. Sift
together next 5 ingredients and add to first mixture. Stir in apples and
walnuts. Pour into a greased 13 x 9 x 2 inch pan, and bake in a preheated oven
at 350 degrees for 45 minutes. Let cool in pan, then spread with frosting. --
FROSTING:--
1 (3 oz.) pkg. cream cheese, at room
temperature
3 tbsp. butter or margarine, softened
Pinch of salt
1/2 tsp. vanilla
1 1/2 c. confectioners sugar
Mix all ingredients together until they are smooth. Spread on cake.

  9. Pour the entire mixture into your prepared baked pie shell. Cover the pie plate and place into the refrigerator for 2 to 3 hours to chill and to firm up. Garnish with some whipped cream before serving if desired.
