APPLE CAKE

4 or 5 lg. cooking apples
3 c. flour
2 c. sugar
1 c. Wesson oil
4 eggs
1/4 c. orange or pineapple juice
3 tsp. baking powder
2 1/2 tsp. vanilla
Pare and slice apples, sprinkle with sugar and cinnamon, then set aside. Put
all other ingredients in a large bowl and beat together for 10 minutes. Fold in
half of the apples into the batter, put rest on top. Grease and flour a tube
pan. Bake at 350 degrees for 1 1/2 hours or until done.

  6. Pour the entire mixture into your prepared baked pie shell. Cover the pie plate and place into the refrigerator for 2 to 3 hours to chill and to firm up. Garnish with some whipped cream before serving if desired.
