MINCEMEAT FRUITCAKE

2 eggs
1 (28 oz.) ready to use mincemeat
16 oz. mixed candied fruit (about 2
c.)
1 (14 oz.) can sweetened condensed
milk
1 c. pecans, coarsely chopped
2 1/2 c. all-purpose flour
1 tsp. baking soda
Heat oven to 300 degrees. Generously grease and flour 12 cup Bundt cake pan or
tube pan 10 x 4 inches. Beat eggs slightly in large bowl. Stir in mincemeat,
candied fruit, sweetened condensed milk and pecans. Stir in flour and soda.
Pour batter into pan. Bake until wooden pick inserted in center comes out
clean, about 1 hour and 50 minutes. Cool 15 minutes; remove from pan. Cool
completely. Elbow Lake
